In addition to his new responsibilities, Flores will be an entrant in “The Best Sommelier in the World Competition” in London taking place April 22nd – this will be his second time competing in this prestigious event. In 2004, Flores was named “Champion Sommelier” in Mexico and that very same year was selected as the Mexican representative at “The Best Sommelier in the World Competition.”The competition is organized by the Worldwide Sommelier Association, the largest Association of Sommeliers with over 100,000 members and co-hosts are the UK Sommelier Association.

Prior to joining Capella Pedregal, Flores was a wine consultant with the Boutique Hotel Casa Natalia in Cabo San Lucas and the Hotel Demetria in Guadalajara. Despite his busy schedule, he also found time to lecture the wine program for aspiring sommeliers at the ECI University in Guadalajara.

Flores began his career with the Salle Empire, Le Grill, Côté Jardin at the Hotel de París, Monte Carlo, Monaco. After that he joined the European Congress in Nice where he served as sommelier for 15 presidents of the European Economic Community.

He went on to join the Crillon Hotel in Paris as their sommelier in 2001 before leaving for Boulevard, a wine and liquor distributor in Cabo. During his time at Boulevard, Flores also served as their wine instructor and sales advisor.

A multi-talented individual, Flores holds a bachelor’s degree in hotel management from CESSA University, Mexico City; and Turquois Foundation & Lycée Technique de Monte Carlo, French Diploma, Marketing, Administration and Restaurant Service, Monaco. He has also been decorated by The American Academy of Hospitality Sciences with their Five Star Diamond Award. He is fluent in English, French and Spanish.

CAPELLA PEDREGAL, CABO SAN LUCAS APPOINTS YVAN MUCHARRAZ, GRADUATE OF THE ACCLAIMED FRENCH LAUNDRY, AS EXECUTIVE CHEF

Cabo San Lucas, Mexico – March 2013 – The ultra-exclusive Capella Pedregal resort has promoted Yvan Mucharraz to Executive Chef after having first joined the property as Chef de Cuisine in 2012. In his new role, Mucharraz will be responsible for the property’s culinary operations, a 42-strong kitchen brigade and overseeing the property’s signature fine dining establishment, Don Manuel’s, the stunning El Farallon, the Beach Club, Crudo’s, 24-hour in-room dining and banquets. Mucharraz will join forces with the resort’s Food and Beverage Director, Marco Bustamante, who also worked with famed Chef Thomas Keller at Per Se in New York, to manage restaurant operations and flagship events like the annual Food & Wine Festival which takes place July 10 to 14, 2013. This year’s Festival will feature chefs like Dean Fearing of Fearing’s, Kent Rathbun of Abacus, and Tim Hollingsworth of French Laundry.

Mucharraz who is fluent in three languages (English, Portuguese and Spanish) began his career at La Bombilla under chefs Yuri de Gortari and Edmundo Escamilla. During his time at La Bombilla, he honed his skills in Mexican gastronomy, delving deep into recipe development and showcasing the cuisine at conferences and festivals around the world in partnership with the respective Mexican embassies overseas.

He then went on to join Tezka in Mexico City in 2006 which was then helmed by the legendary Juan Mari Arzak, one of the great masters of New Basque cuisine. The restaurant at that time was ranked number 76 in Restaurant Magazine’s “The World’s Best 100 Restaurants” list. After leaving Tezka, Mucharraz joined the Rosewood Mayakoba in Riviera Maya and oversaw the resort’s signature fine dining restaurant, Casa del Lago.

In the next stage of his career, Mucharraz was appointed Chef de Partie at the renowned, three-Michelin starred French Laundry in Napa Valley in 2010. At French Laundry, he was involved with Keller’s team in the development of their popular tasting menu and signature dishes.
