Iconic Georgia Resort Taps Industry Expert to Oversee the Forbes Five-Star Spa at Sea Island
Sea Island announced today the appointment of Ella Stimpson as Spa Director of the resort’s renowned Spa at Sea Island, which has received the Forbes Travel Guide Five-Star award for six consecutive years and was recently named the #4 Spa in the Continental U.S in Travel + Leisure 2013 Readers’ Choice Awards. Stimpson will be responsible for overseeing all aspects of the prestigious 65,000 square-foot spa, including developing innovative treatments, services and classes and leading an expert staff of more than XX therapists, consultants, and providers.

Stimpson comes to Sea Island from Las Vegas, where she most recently served as Executive Director of Spa Operations for Wynn and Encore Las Vegas, the first casino spa to be awarded a Forbes Five-Star rating. During her time in Las Vegas, Stimpson also had the honor of serving as Chairman of the International Spa Association (ISPA) from 2011-2013, where she continues to serve on the Board of Directors. She received the Las Vegas Spa Association Spa Director of the Year award in 2011. Stimpson began her career in 2000 as a personal trainer at The Broadmoor in Colorado Springs, where she was quickly promoted to Spa Manager, followed by Spa Director in 2002. During her nine-year tenure at The Broadmoor, Stimpson was involved in training and leadership development for the hotel management team, and under her leadership The Broadmoor Spa earned a Five-Star rating from Forbes Travel Guide.

Commemorate the Tenth Anniversary of the G8 Summit (January 1-February 16, 2014)
Ten years ago, Sea Island hosted this impressive gathering of world leaders and to celebrate the anniversary, the resort is offering an unprecedented deal in which guests who book three nights at The Cloister now through February 13 receive their third night for $8. Additionally, Sea Island will revisit this key chapter of their history with a dinner featuring dishes served at the Summit, including the George Bush Special Burger and Buttermilk Batter-Dipped Fried Lobster Tail. Downton Abbey Goes Southern (January 17-19, 2014)
Sea Island is bringing one of today’s most popular shows to life with a unique “Downton Abbey”-inspired weekend, featuring actor Allen Leech (aka Tom Branson) and Jessica Fellowes, author of the two bestselling “Downton Abbey” companion books. The outspoken former family chauffeur and widower of Lady Sybil will team up with the author in a series of events including a “Downton Abbey’- themed pub quiz and a Q&A session, during which guests will have the opportunity to ask questions and gain insider knowledge into the show. Driving Zeal’s culinary finesse is applied with a cultivated hand that transforms slow-food classics into refined delicacies. Guided by a “farmer’s mission” for organic purity, Zeal creates ingredient- driven, regionally inspired Southern dishes. The old-world décor of the Georgian Room extends the stately presence of Addison Mizner’s original Spanish mission Cloister. The energetic environment of the River Bar at The Cloister presents a casual yet decidedly delicious alternative. Set beside the gentle current of the Black Banks River, this French Style brasserie’s simple elegance is captured in bare wooden tables, a richly carved ceiling, and handsome wrought-iron chandeliers. Chef de Cuisine, Jeremy McGarry puts forth a menu featuring classics like, Moules Mariniere, Steak Frite, and Beignets de Brioche along with familiar salads, sandwiches, entrées and tempting desserts. A playful cocktail menu features Southern classics such as Mint Juleps made with Woodford Reserve Bourbon and Sazeracs – a New Orleans original and the world’s first cocktail. THE LODGE AT SEA ISLAND GOLF CLUB AND SURROUNDINGS

Executive Chef John Helfrich oversees the culinary direction at The Lodge, Sea Island’s Forbes Five-Star, AAA Five-Diamond hotel at the epicenter of the resort’s three championship golf courses. Surrounded by historic golf photos and memorabilia, devotees can dine at Sea Island’s classic steakhouse, Colt & Alison, where Chef de Cuisine Shane Whiddon’s prepares some of the finest USDA wet- and dry-aged beef along with local and imported seafood specialties. For a tavern setting with a gourmet twist, the Oak Room at The Lodge proves unmatched. The relaxed tavern is lined in oak and appointed with leather ceilings and features hand-painted murals and a rustic fireplace. Chef de Cuisine Roderick Smith’s expanded tavern menu ranges from the Georgia pulled Pork Tacos to Georgia Grilled Shrimp with Sweet & Sour Eggplant. Outside on the terrace, sprawling views across Plantation Golf Course and St. Simons Sound unfold – a supreme backdrop for a refreshing lager or a single-malt scotch while the bagpiper plays at sundown.

Southern Tea at The Lodge is a classic tradition that has recently returned, featuring Chef’s specialty tea sandwiches and pastries, loose-leaf teas, optional beverages, and tableside service, accompanied by a Sea Island pianist.

Located at the Retreat Clubhouse, the Davis Love Grill serves as Sea Island’s sports pub. At lunch and dinner, Chef de Cuisine Ben Hankey offers a mix of modern club cuisine and nostalgic club favorites, as well as a wide selection of cocktails, wines on tap, and craft beers, topped off with the option of viewing virtually every televised sporting event available.

WINE CELLAR DINNERS

Sea Island also houses two wine cellars, at The Cloister and The Lodge, available for small-group, private dining. Alive with history, the old-world-meets-new-world ambience of each cellar delivers a heady experience. The Cloister Wine Cellar seats 20 at a handmade table of English oak. Reclaimed heart pine from a mid-1880s South Carolina sawmill has been refashioned into rough-hewn ceiling beams, while beneath the cellar’s alcoves, North Georgia limestone pays homage to the limestone-rich soil responsible for some of the world’s finest grapes. The Lodge Wine Cellar evokes Old English romance. An exposed-brick staircase carries guests through dim candle light wrung from iron wall sconces to the intimate, bottle-lined chamber. The cellar seats 20 people at the 14-foot oak table by England’s Yorkshire Households beneath two stately chandeliers.


THE CLOISTER BEACH CLUB

Southern Tide, Sea Island's newest Oceanside restaurant, overlooks the dunes of Sea Island Beach and the Atlantic Ocean. Honoring the traditions of Sea Island, Southern Tide taps into the strong southern influences of Chef de Cuisine Jason McGarry to offer comfort dishes such as Shrimp and Grits with Logan Turnpike grits in a Andouille cream sauce; Pan Seared Triple Tail with summer peas, and braised mustard greens, Southern Fried Chicken Dinner, brown butter mashed potatoes and gravy and green bean casserole.

The Wonderland sweet shop turns Sea Island into every kid’s Charlie and the Chocolate Factory, with 15 different ice creams to choose from and over 65 varieties of candy. Delight in any of Wonderland’s sweet treats, from ice cream to malts, and milk duds to milk shakes. Sea Island Executive Pastry Chef Kurtis Baguley offers new twists on old favorites like the S’more Sundae which features chocolate or vanilla ice cream layered between graham cracker crumbs, a layer of marshmallow sauce, a layer of chocolate sauce and topped with whipped cream and a graham cracker garnish; and the signature Gold Brick Sundae.

Located in the heart of The Beach Club, Sea Island’s Snack Shack features casual fare from Chef de Cuisine David Scarbrough such as “Go Dawgs” hot dogs, cool salads, and sandwiches, including Chef Davis’ specialty warm turkey and brie. Open seasonally, Snack Shack appeals to beach and pool goers with poolside service and seating on the terrace overlooking the family pool.

The Flip Flop Bistro, the Beach Club’s casual dining truck, serves up fresh and delicious seasonal fare under the direction of Chef de Cuisine David Scarbrough. Sea Island’s mobile culinary experience was inspired by the gourmet food truck craze that has swept the east and west coasts. Since Howard Coffin founded Sea Island Company in 1926, family ownership and management of the company have maintained a strong commitment to environmental stewardship and careful, measured growth, helping to nurture the unique atmosphere that residents and visitors of the Golden Isles cherish.

Sea Island Company has been a strong proponent of careful planning and zoning. Just after the establishment of the Company, Coffin funded a survey creating the first planning and zoning controls in Glynn County, making Glynn only the second county in the nation to have such guidelines at the time. Today, the Company continues to champion low-density, high-quality development.

The planting of live oaks - the state tree of Georgia and the Southern symbol for strength - has been a meaningful way to commemorate special guests and visitors to The Cloister since President Calvin Coolidge visited in 1928. These commemorative oaks help conserve energy, improve air quality and reduce storm water runoff and soil erosion, in addition to being historical markers highlighting various celebrations in Sea Island's 80+ year history.

As an early and constant supporter of the St. Simons Land Trust, Sea Island Company has donated, via a voluntary nightly contribution added to guests' bills, over $770,000 (as of December 2008.) Island Resorts when Mobil Travel Guide honored the historic, family-owned Georgia
resort with four Five-Star awards. The Cloister at Sea Island made Mobil Five-Star

SEA ISLAND, GA (Jan. 28, 2008) " For the seventh consecutive year, The Lodge at Sea Island has been awarded Five Stars by Mobil Travel Guide while The Cloister Hotels two-year-old Georgian Room joins only 17 other restaurants in the U.S. and Canada to boast the coveted Five Stars.
