The Carolina Inn Celebrates Earth Day with Weeklong Activities
Posted April 18, 2016
CHAPEL HILL, N.C. (April 2016) – In recognition of Earth Day on April 22, The Carolina Inn, A Destination Hotel that opened in 1924, embraces the need to preserve the environment and is committed to reducing its impact on the Earth’s natural resources while maintaining a superior guest experience.

The historic hotel’s Green Team has organized various events this week to promote a healthier environment for the entire community.

All week, it will be collecting books to donate to the Chapel Hill Public Library. On Friday, each overnight guest will receive a packet of North Carolina wildflower seeds as the turndown amenity.

In addition, the second Household Hazardous Waste Collection encourages all employees to bring their unwanted or expired hazardous items to the Inn to be properly disposed at the Orange County landfill. Those items include lawn, garden, and pool chemicals, household cleaners and chemicals, batteries, paint, sealant, solvents, used cooking oil, fluorescent lights, including ballasts, tubes and “twirly” compact fluorescent bulbs, thermostats and thermometers containing mercury.

Of note, the historic hotel implemented more than 100 environmental initiatives since the inception of the Destination Earth program almost a decade ago. The eco-friendly program elements include decreasing energy and water usage, reducing waste, increasing recycling and composting, and purchasing local and organic food and beverages when possible.

It is the hotel’s firm belief that everyone benefits from sustainable business practices, and the staff takes pride in all of its efforts to preserve and protect the environment.

Below is a sample of some of the environmental initiatives the Inn has already undertaken, all aimed at improving the Inn’s sustainability and efficiency today and well into the future.

• Energy-efficient light bulbs wherever possible
• Low VOC paint to improve indoor environmental air quality
• Wool corridor carpet, produced under strict environmentally-conscious guidelines and fully recyclable
• Luxurious bathmats made from bamboo yarns
• 100% organic cotton bed linen
• Natural and organic bathroom amenities in containers produced from post-consumer recycled materials
• Partially-used guest amenities donated to “Clean the World” which distributes recycled soap to impoverished countries
• Environmentally-sound cleaning products
• Linen and terry reuse program to minimize consumption of water and chemicals
• Cotton terry towels stocked in public restrooms in place of disposable paper products
• A laundry ozone system to reduce energy and chemical consumption
• Food and beverage menus guided by principles of sustainability, incorporating local and regional produce and perishable goods
• Extensive composting program that reduces our waste by four tons every month and returns usable material to the earth
• Complimentary daily newspapers in our lobby eliminate the need to discard the many unused newspapers that used to be in front of every door
• Property-wide recycling program, including guest rooms, of all recyclable material
• Dual flush toilets in all public restrooms to conserve water

Crossroads Chapel Hill Showcases Spring Bounty
Posted April 12, 2016
CHAPEL HILL, N.C. (April 2016) – The new Crossroads Chapel Hill opened more than six months ago as a crafted dining experience unique to Chapel Hill. Share a meal or cocktail with friends and family in the historic setting of The Carolina Inn, A Destination Hotel. With its distinctly southern soul and, specifically, its North Carolina Spirit, Crossroads infuses dining experiences this spring with energy, great food and a comforting sense of place.

Even with a new name, new menu, new venue and more seating, Crossroads Chapel Hill is building upon its already stellar reputation – Four-Stars by Forbes Travel Guide for 16 straight years (one of only two in North Carolina for 2016) and AAA’s Four Diamond rating for 14 straight years as Carolina Crossroads – and becoming more welcoming to newer generations and young professionals by serving as a central gathering place for UNC students, faculty, staff and Chapel Hill residents and visitors.

Chef James Clark’s spring menus focus on grown, caught and raised ingredients that are sourced regionally among 14 different farmers, fishermen and artisans to produce his interpretation of Carolina Cuisine.

With a rebuilt kitchen at his disposal to accommodate 50 more seats in the new restaurant and bar configuration, Clark recently shared some perspectives a half year into this new journey:

How would you describe the past six months?
We are still evolving from a food perspective but have stayed true to our mission. It’s been very busy as our guests love the new space and have really enjoyed the food. One of the coolest things has been the overall acceptance of this bold new chapter of the Crossroads Chapel Hill. Our capture rate from hotel guests has increased significantly as people are stopping to eat and drink rather than just pass through.

What are some surprises?
The most pleasant surprise has been the positive reaction to the lunch “Inn Tray.” We eliminated the long-time lunch buffet with some trepidation. Fortunately, our guests love the new lunch “Inn Tray” which helps validate that decision. It’s been a real success story and the majority of our lunch sales. The quiche and shrimp and grits have been big hits.

How have guests reacted to the new spaces?
We still offer great food and great service but in a more relaxed setting. Crossroads Chapel Hill is certainly evolving as a place to be and winning over lots of people.

What are some of the more popular spring dinner dishes?
We added some new sharing plates like Grilled Asparagus, Charcoal Roasted Peel & Eat Carolina Shrimp and a bold dish like Clam Frites served with Smoked Pork Broth, Benton’s Bacon, Fennel & Carolina Bleu Frites. I reintroduced my North Carolina Oysters dish that is also a hot seller along with the Carolina Barbeque Pork Tenderloin large plate.

What are the nightly Blue Board favorites?
We have great response each evening but the big favorites are the Monday Crispy Carolina Catfish, Tuesday Cackalacky Mopped Lamb Ribs, Wednesday Handmade Pasta and Sunday Carolina Fried Chicken. We feel that the Friday Frogmore Stew will be a huge hit once the Friday on the Front Porch series starts in late April.

The Carolina Inn and Crossroads Chapel Hill Again Awarded Prestigious AAA Four Diamond Ratings
Posted January 19, 2016
CHAPEL HILL, N.C. (January 2016) – Diamonds – AAA diamonds, of course – are a guest’s best friend when it comes to identifying quality accommodations and fine dining. The Carolina Inn, A Destination Hotel that opened in 1924, and Crossroads Chapel Hill have been awarded AAA’s prestigious 2016 Four Diamond ratings. It marks the 19th consecutive hotel honor and 14th straight restaurant recognition.

“The Carolina Inn has many long standing and wonderful traditions and we are proud to receive these prestigious hotel and restaurant ratings,” said General Manager Mark Sherburne. “Our team works extremely hard to earn and maintain the AAA Four Diamond level of quality. We try to make sure we keep Four Diamonds by not simply meeting – but by exceeding each of the criteria for those high ratings each and every day.”

“AAA’s requirements for a Four Diamond rating are scrupulous, and those achieving this status are among the finest hotels and restaurants in the country,” said Dave Parsons, president and CEO of AAA Carolinas. “Less than 4 percent of annual inspections conducted nationally result in a Four Diamond rating.”

AAA gives the Four Diamond Awards annually to qualified hotels and restaurants in North America. AAA’s Diamond Rating is one of the few hotel appraisal systems that rely on physical on-site evaluations. AAA’s inspection team members assess each of the eligible properties based on comfort, cleanliness, security and offered services and amenities. Each hotel is then awarded a Diamond Rating between one and five, with five being the best.
