The Beverly Hilton Appoints Matthew Morgan as Chef de Cuisine
Posted May 19, 2014
California Native To Oversee Legendary Hotel’s Food and Beverage Outlets
Beverly Hills, Calif. – May 19, 2014 – The Beverly Hilton, a Forbes Four Star hotel, today announced the appointment of Matthew Morgan to the position of Chef de Cuisine. In his new role, Morgan will oversee the menu of the hotel’s three food and beverage outlets including the pool-side CIRCA 55 Restaurant, the Lobby Lounge and Trader Vic’s Lounge. Morgan, a California native, brings with him a new culinary perspective with an emphasis on re-imagined classic dishes and high-quality ingredients.

“We are delighted to welcome Matthew to his new position and look forward to the exciting developments he will bring to our culinary program,” said Paul Carter, director of food and beverage, The Beverly Hilton.

Most recently, Chef Morgan served as the senior sous chef at The Beverly Hilton, contributing to the day-to-day operations of the restaurants. During his time at The Beverly Hilton, Morgan assisted in menu development for two HBO Golden Globe Awards after parties as well as dozens of other star-studded events. Prior to this, Morgan was part of the culinary team and at Ritz-Carlton Marina Del Rey and Ritz-Carlton Phoenix.

When looking for inspiration, Chef Morgan visits local farmers markets searching for the freshest seasonal produce that influence his dishes. He enjoys experimenting with nostalgic, comfort-foods like mac-and-cheese and adding new flavors and unexpected ingredients. When he is not in the kitchen, Chef Morgan enjoys tending to his 60-foot garden at home, where he is growing nearly 30 different crops including herbs, berries, variety of tomatoes, eggplant and more.

“I believe the greatest flavors start in the ground,” said Chef Morgan. “Working in my garden allows me to see, smell and touch the produce so I know when certain ingredients are at the peak of flavor and ready to be served to our guests.”

Offering a seasonal, fresh menu, chic décor and poolside dining, the hotel’s main restaurant, CIRCA 55 is open daily from 6:30 a.m. to 10:00 p.m. The Sunday Champagne Brunch, a Beverly Hills tradition, is served from 11:00 a.m. to 3:00 p.m.

Posted May 23, 2013
BEVERLY HILLS, May 23, 2013 – The Beverly Hilton is officially kicking-off the summer season by teaming up with stylist and designer to the stars, Estee Stanley, to re-imagine and re-invent the hotel’s famous Aqua Star Pool; the largest pool in Beverly Hills. Noted for styling Hollywood starlets such as Jessica Biel and Lea Michele, her interior design line with HomeMint and editor-at-large role with the newly launched Domaine, an online shelter magazine, Stanley now brings her expert flair for melding fashion and interior design to her first ever partnership with a hotel brand. From the aesthetics of the pool deck and cabanas to the pool staff’s attire and landscaping, Stanley has created a breezy California vibe that is fresh and modern; with a nod to The Beverly Hilton’s storied history.

Stylish travelers and Beverly Hills locals have long flocked to the Aqua Star Pool to take part in everything from Hollywood power lunches and incognito star-spotting to spa days and enjoying the famous California sun. This summer, the Aqua Star Pool debuts a new look that evokes classic summer style with lemon trees and lush bougainvillea shading plush white pool chairs and fire pit arrangements perfect for sunset cocktails. Stanley has styled each of the poolside cabanas with navy and white pillows and playful art pieces. Al fresco lunches at the hotel’s signature restaurant, Circa 55, will now be enjoyed under modern sculptural lighting with refined yet relaxed seating options. Beverly Hill’s most fashion forward pool staff will also be outfitted in Lacoste from head-to-toe. Stanley hand-picked a navy and white palette to compliment the bright décor of the pool and each attendant will sport a combination of classic Lacoste polo’s, tennis dresses and shorts with complimenting sneakers.

“I’m thrilled to work with The Beverly Hilton for my first hotel project” said Estee Stanley. We wanted to bring a fresh perspective to the pool area and celebrate the essence of a California summer and working with partners such as Lacoste and International Silk and Woolens allowed us to achieve the perfect environment.”

THE BEVERLY HILTON IS AWARDED A 2010 FORBES TRAVEL GUIDE FOUR STAR RATING
Posted April 14, 2010
The Beverly Hilton was honored with a 2010 Forbes Four Star Award by Forbes Travel Guide, formerly Mobil, in the first awards since the brand transfer from Mobil to Forbes was announced this Fall. The list has defined the industry's highest standard for excellence in hospitality for over 50 years. As the originators of the prestigious star rating system, Forbes Travel Guide provides one of the most comprehensive evaluation systems of hotels, restaurants and spas in the world. The Beverly Hilton's review by Forbes Travel Guide's incognito experts can be found online at www.forbestravelguide.com

"We are proud to be recognized with a Forbes Four Star rating by Forbes Travel Guide for the third consecutive year. It is our honor to serve each and every guest with a level of luxury and satisfaction synonymous with Beverly Hills and the Forbes Travel Guide "gold standard" expert criteria," said Sandra Murphy, General Manager of The Beverly Hilton.

"We are thrilled to have our brand join Forbes. The 2010 edition is the first under the Forbes Travel Guide banner and we look forward to a long and successful partnership with Forbes," said Shane O'Flaherty, President and CEO of Forbes Travel Guide, who noted that while the hospitality industry has been challenged this year, it has risen to the occasion. "With an unprecedented downturn in the economy this year, properties have taken steps to refine their processes to become more efficient. Yet, it is important to note that the employees of these same properties have remained as engaged and passionate as ever about providing the best guest experience that they can."

Forbes Four Star Rating

Forbes Travel Guide's ratings process is based on more than 750 standardized criteria for hotels, making it the most rigorous and comprehensive in the industry. The process begins with a facility inspection that considers every aspect of the property, including its overall cleanliness, condition and location. To achieve Forbes Travel Guide Four and Five Star status, properties must meet or exceed the bar-setting service standards, which are determined through an unannounced, undercover service evaluation conducted by Forbes Travel Guide's expert inspectors.
