C restaurant's Matt Bolton unveils dining delights...
C restaurant Executive Chef Matt Bolton celebrates the New Year with some sensational additions to the C restaurant lunch and dinner menus, as well as enhancing the C bar menu. A few of the tempting new items include a re-imagined Arctic Char with Brussels Sprouts, a pork chop to write home about, and mushroom risotto which makes you understand Cal-Ital--a memorable fusion of California ingredients with Italian expertise. Free-range organic chicken can be added to the risotto to make it even more delectable. Chef Bolton has also created his signature version of New England Clam Chowder, which is deeply flavorful without being rich or heavy. The prevailing theme of the new items is balance and flavor, with careful attention to the potential for perfect pairing with your favorite wine selections. Food and wine--the perfect marriage!

Executive Chef with Local Roots Joins the Award-Winning Hotel Team
The C restaurant at InterContinental The Clement Monterey is pleased to welcome Executive Chef Matt Bolton. Chef Bolton joined the team near the end of the summer and has invested time familiarizing himself with the existing restaurant and its menus, but is now beginning to incorporate new items with his very personal style of culinary interpretation. The owners of InterContinental The Clement Monterey, Pacific Hotel Management, conducted a nationwide search to hire an Executive Chef, but were immensely fortunate to find him a few miles up the mesmerizing coastline at the Highlands Inn Pacific’s Edge.

Hallmarks of Chef Bolton include brilliant technique, a modest personality and an inspirational leadership style. His passion and commitment are evidenced in all aspects of his position, and the future of the C restaurant, C bar, C side patio and the hotel’s catering operations are bright indeed. His flavorful creations are accessible, imaginative and not overly rich—relying heavily on superb ingredients and flawless preparation.

The C restaurant is open 7 days a week, 365 days a year, for breakfast, lunch and dinner, and features expansive blue water views of the Monterey Bay National Marine Sanctuary from every table.
