Under the direction of Spa Director Kimberly DeOrsey, who hails from top spas throughout the U.S. including St. Regis Monarch Beach in Dana Point, Calif. and the award-winning destination spa at Nemacolin Woodlands in Farmington, Penn., The Spa takes a holistic approach to achieving overall wellness through the restoration and realignment of each guest’s mind, body and energy.

Treatments and therapies blend the best of ancient practices such as Qigong Healing Classes with the most advanced, state-of-the-art technology. For example, The Spa is introducing its new HydraFacial™ machine, which addresses multiple skin issues. Designed for all skin types, the Basic HydraFacial™ experience is 30 minutes long and includes a deep cleansing, gentle exfoliation, painless extractions and a burst of hydration utilizing rich antioxidants, leaving skin glowing. PALM BEACH, Fla., April 9, 2012 – Malcolm’s, The Omphoy Ocean Resort’s signature restaurant offering panoramic views of the Atlantic Ocean, has opened its doors to culinary enthusiasts seeking an exquisite surfside dining experience. Offering fresh, clean standards with an innovative twist, Malcolm’s cuisine reflects Executive Chef Michael Wurster’s passion toward responsible cooking with sustainable foods.

Chef Wurster, a Culinary Institute of America graduate, joins The Omphoy Ocean Resort with an impressive pedigree, having honed his craft in the kitchens of New York’s Le Cirque, Alain Ducasse and Lutèce as well as The French Laundry in California under the famed Thomas Keller.

For Malcolm’s, he has cultivated a collection of local farmers and purveyors to source a majority of ingredients appearing on the menu. Examples include Gary’s Seafood Specialties and North Star Seafood for Yellowtail Snapper, Royal Red Shrimp and Tuna, and Freedom Fresh’s network of farms for produce.

“Our goal was to introduce an array of options and flavors at moderate prices,” states Wurster. “Palm Beach is an unparalleled destination for fresh food and we are proud to contribute to its culinary diversity by representing the farm-to-table movement.”

Malcolm’s “Crudo” highlights include Royal Red Shrimp garnished with Hawaiian pink salt and lemon ($9) and Tuna garnished with a compression of watermelon, fennel, pistachio and yogurt ($10). “Tastes” include Asparagus Tempura with lemon aioli ($9), Mussels with garlic, parsley and saffron ($8) and Veal Meatball with tomato and parmesan crisp ($10).

PALM BEACH, Fl – February 6, 2012 – The Omphoy Ocean Resort Palm Beach proudly announces the appointment of Graham Randall as Executive Pastry Chef. Randall will be responsible for the creation, execution and management of all pastry related operations at The Omphoy – the only beachfront boutique hotel in Palm Beach and the first new hotel development on the island in 20 years.

Randall boasts more than twenty years of international hotel pastry experience. After graduating from Brighton College of Art & Technology, Brighton England and Thames Valley University, Thames, England, Randall began his career in Surrey, United Kingdom in 1993 as Assistant Executive chef de Patisserie at the Selsdon Park Hotel Golf and Country Club.

In 1995 he earned his first position of Group Executive Pastry Chef on the platinum west coast of St. James Barbados at the Mango Bay Resort Hotel, where he created tropical inspired pastry creations. During that time, Randall had the privilege of creating pastry specialties for former President Bill Clinton and other diplomatic dignitaries at the international economic summit.

In 1999, he returned to the United Kingdom as Executive Pastry Chef and opened Renaissance Chancery Court Hotel, a five star property in the heart of London. Most recently, Randall has spent the last eight years as Pastry Chef at The Breakers Palm Beach, FL.

“Randall’s commitment to excellence and passion for pastry is reflected in his inventive creations that involve fresh and unique ingredients.
