Kohala Coast, Island of Hawai`i – Regional Vice President, Hawai`i and Fairmont Orchid General Manager Christof Luedi is pleased to announce the appointment of Chef Hubert Des Marais IV to the position of Executive Chef for the AAA Four Diamond award winning resort.
Des Marais brings with him more than 35 years of culinary experience in the hospitality industry spanning four continents. Prior to joining The Fairmont Orchid, Hawai`i, Des Marais was the Group Executive Chef for Fairmont East Africa, overseeing and managing the culinary operations of all Fairmont East Africa properties including Fairmont Mara Safari Club, Fairmont Mount Kenya Safari Club, Fairmont The Norfolk, Fairmont Zanzibar, Aberdare Country Club and The Ark where he was named 2011 Kenya Chef of the Year.
A graduate of the Culinary Institute of America, Des Marais is noted for his deliciously healthy food that is fresh, flavorful and truly inventive. He has been named one of “America’s Ten Best New Chefs” by Food and Wine Magazine, has been featured on Food Network, PBS’ “Great Chefs of the Southeast,” has cooked at the James Beard House on numerous occasions, and was among an elite group chefs invited to cook for the James Beard Foundation Awards Gala.
An avid deep-sea fisherman and cultivator of his favorite flower, the orchid, Des Marais will feel right at home on the Island of Hawai`i with his wife and college-aged son.

Kohala Coast, Island of Hawai’i- Regional Vice President, Hawaii and General Manager Christof Luedi is pleased to announce the appointment of Aron Weber to the position of Executive Pastry Chef for The Fairmont Orchid, Hawai’i. Weber joins the luxury AAA Four Diamond award winning resort from The Fairmont Washington, D.C. where he held the position of Executive Pastry Chef.
Weber began his career at The Fairmont Empress as a Pastry Journeyman. In 2003, Aron was promoted to Chef de Partie at The Fairmont Southampton where he was instrumental in helping the restaurant earn the first AAA-Five Diamond status in the Caribbean region. In 2006, Weber joined the pastry team at The Fairmont Washington, D.C. and was subsequently promoted to Executive Pastry Chef.
Chef Weber debuted his culinary creations at the 17th annual ‘Q’uisine of Hearts Valentine’s Brunch, a benefit for the Kona-Kohala Chapter of the American Culinary Federation and took home first place with his white chocolate lilikoi dessert made up of layers of crunchy hazelnut chocolate, creamy lilikoi curd, decadent white chocolate mousse and topped with a light raspberry foam set within a Chambord filled raspberry cup.

Mr. Luedi's previous post was at The Fairmont Kea Lani on the island of Maui where he held the positions of General Manager since 2001 and Regional Vice President, Hawaii since 2005.
Luedi has more than 20 years of experience in the luxury hospitality industry across the United States. An avid waterman with a passion for outrigger canoe paddling, Mr. Luedi will feel right at home on the Island of Hawaii. In 2003, Mr. Luedi together with local Maui community leader Kimokeo Kapahulehua, envisioned traveling the entire Hawaiian archipelago in a traditional six-person Hawaiian outrigger canoe, beginning on the Island of Hawaii. This dream became a reality in July of 2008 when the paddlers completed their final leg which marked the completion of a six-year, 1,650 mile archipelago journey.
"The wonderful people of Maui and The Fairmont Kea Lani were instrumental in my apprenticeship in becoming a 'Kamaaina' (local) and I look forward to expanding my knowledge of the Hawaiian culture here on the Island of Hawaii and sharing it with our employees and guests alike."
