The staff and accommodations were excellent, bar none. The resort is a beautiful, relaxing setting in the middle of Camelback Mountain. The resort's restaurant has an award winning Iron Chef on staff. I highly recommend this resort for any stay, whether personal or business.

I was a pharmaceutical representative and we had a meeting here. It's was one of the most memorable places I visited. The environment is very relaxing and charming. In between meetings we could step outside and feel the dry heat of the desert which was a nice change. The meeting spaces were perfect - especially the smaller break-out rooms we used. Overall a great environment to conduct business. Highly recommend this place for your next meeting.

The Best Chicken in the World Debuts at T. Cook's

Phoenix, Ariz. - (June 2009) -The French have long held numerous culinary bragging rights, and let's face it, making chicken a gastronomic star requires a certain je ne sais quoi. Now, with the best poultry in the world (known as the French Label Rouge program) available in the United States, discerning chefs are finally elevating the status of chicken. And no one is doing it with more gusto than Royal Palms Resort and Spa's Executive Chef, Lee Hillson.

Just one taste and Hillson was sold on Poulet Rouge, exclaiming "that it tastes like chicken tasted 100 years ago and is truly a phenomenal product." Despite being nearly triple the price, Hillson uses Poulet Rouge throughout the resort from chicken breasts for banquets to bones for stock in T. Cook's restaurant. A movement born in the 60s.
Before All-Natural, Free Range, Certified Organic, Certified Free Farmed and Certified Humanely Raised became required buzzwords on upscale menus, there was the French Label Rouge program-which has more stringent requirements than any program in America. Born as a grassroots movement in the 60s as a backlash to the industrialization of poultry, farmers in Southwestern France banded together to create a program focusing on high quality products, including meats and poultry.

'Vividly Distinguishable' chicken comes from heritage breeds..
Label Rouge emphasizes quality pure and simple, such as taste, free-range production, food safety and even requires regular taste-testing as a certification requirement to validate that these products are 'vividly distinguishable" from conventional poultry. The predominant reason for the superior taste of the Label Rouge products is the use of slow-growing birds from old rustic genetic stocks. These heritage breeds produce meat that is flavorful and firm with great texture and thin skin. The poultry is marketed as Poulet Fermier (farm chicken) in France, with the region in which they are grown attached as the name.

Ashley Farms in North Carolina took up the call to be the first and only farm in the United States to grow an original rustic breed from France. After tireless research and travel, the Redbro Cou Nu (red feathered naked neck) chicken was chosen for the American market, as it is regarded by most as having a distinctive taste and the best culinary qualities in the Label Rouge program. Following the Label Rouge tradition, these chickens are marketed as Poulet Rouge Fermier du Piedmont to reflect both the genetics of the bird and the Piedmont area of North Carolina.
To ensure the exact genetics, parent stock was imported from France to Ashley Farms, where the strict French guidelines for growing and processing the birds are not only met but exceeded. These birds are grown in small houses with generous outside access on a small farm, where the farmers shower them with special care and ensure humane treatment. Identical to the French farms, an all-grain diet is adhered to and no medications, growth stimulants, fishmeal, antibiotics or artificial ingredients are used. Attention to the meticulous details of superior quality continue as the birds are grown just 26 miles of the processing plant so they do not become dehydrated during transport. Finally, they are air-chilled and sold within four days of processing.

Chef Hillson at T. Cook's introduces his private label marmalade

PHOENIX - (October 2009) - Executive Chef and Iron Chef competitor, Lee Hillson of Royal Palms Resort and Spa, takes the term "house made" far beyond what most other top chefs are doing. It started with his private label Pesto recipe several years ago, and he has continually added new products, some for sale, some to be enjoyed only as a guest in T. Cook's.

In 1929, the original Royal Palms was built on 65 acres in the middle of a citrus grove at the base of Camelback Mountain. Today, many of the original trees are peppered throughout the grounds and around T. Cook's. In years past, citrus was one of four key drivers of the Phoenix economy.
Debuting in October, Chef Hillson's Orange Marmalade will be a regular accoutrement on the restaurant's breakfast tables and also available for purchase at $8 per jar. When the citrus is picked from the trees adorning the resort's grounds in late January or early February, an estimated 1,000 to 2,000 numbered jars of signature marmalade will be available. For the balance of the year, the Royal Palms Marmalade will be made to the chef's recipe using citrus from outside Arizona. Both Chef Hillson and Pastry Chef Ronnie Dilla are creating menu items that will showcase the marmalade year-round.

Currently, T. Cook's offers an entre on the dinner menu and a luncheon dessert featuring the marmalade: Pan roasted Orata stuffed with orange marmalade & basil on a bed of crushed fingerling potatoes, heirloom tomatoes & fennel ($29) and Adora , a white chocolate Grand Marnier mousse with orange marmalade in the center on a vanilla bisquit with mixed berry sauce ($10). The marmalade is in the sauce on the seared mahi fish tacos ($14) on the lunch menu. Large jars of Chef's pickled vegetables such as carrots, onions, cauliflower, mushrooms, beets and kosher pickles colorfully line a cabinet in the restaurant. While these are not available for purchase, Chef Hillson uses them liberally in his menus in salads and as accompaniments. The list of pickled items, of course, varies seasonally.

Chef Hillson's latest house-made venture is charcuterie. The rows and rows of cured meats in his charcuterie locker are expanding daily with luscious link chorizo, boar prosciutto, pork loin, lardo, pancetta, soppressata, coppa, mortadella, and lamb prosciutto to name a few. These too he features on his menus on everything from breakfast dishes to pizzas on the lunch menu and antipasto on the dinner menu. "Not only is this a lot of fun, but the more things we an make in house, the more we can control the integrity of what we serve our guests. At the same time, we continue to challenge our culinary team, teaching them new things - back to basics, as it were," states Hillson.

PHOENIX - (October 2009) -According to Royal Palms' Director of Romance, Robert Vickrey, romancia is still hot. The economy may have cooled down, but love has not. Ronnie Dilla Named Pastry Chef At Royal Palms Resort And Spa

PHOENIX - (October 2009) -Ronnie Dilla has been named Pastry Chef for T. Cook's and Royal Palms Resort and Spa. He joined Royal Palms as Assistant Pastry Chef in 2006. Overseeing a staff of eight, Dilla is the creative force behind all of the desserts and pastries on the award winning T. Cook's menu, the elaborate wedding cakes and pastries for weddings and special events held at the resort, and the sugar and chocolate sculptures for VIP amenities and holidays.

Prior to joining Royal Palms, Chef Dilla held lead pastry positions at The Phoenician and then the Wigwam Resort & Spa where he as named Employee of the Year in 2005.

Though born in the Philippines, Dilla moved to Arizona at the age of 17 and took classes at Phoenix College before attending Scottsdale Culinary Institute where he earned an Associate of Occupational Studies Degree in Le Cordon Bleu Culinary Arts. He also credits two mentors who helped him evolve into the professional he is today. First, was Patrice Caillot, World Pastry Champion in 2004. LANDSCAPE MANAGER TURNS ROYAL PALMS RESORT AND SPA INTO A 100% GREEN ENVIRONMENT WITH HIS COMPOST TEA AND ORGANIC GARDENING METHODS

PHOENIX - (August 2008) - When Landscape Manager Joshua Johnson first laid eyes on the grounds at Royal Palms Resort and Spa, it was love at first sight. The Mediterranean influence of the resort's gardens reminded him of New Orleans where he lived before Hurricane Katrina. He knew instantly that this was the perfect spot for his vision of what gardens could be and for his personal brand of landscaping which has roots in permaculture, defined as "a science developed through the observation and analysis of natural systems harmoniously integrating landscape and people in a sustainable way." The management team of Royal Palms, impressed with his ideas and new approach, granted him free reign to transform the grounds from beautiful to stunning and environmentally responsible.
As a permaculturist, Johnson describes his trade as gardening that follows the sustainable practices used for generations by farmers. This means creating naturally recurring cycles of care for vegetation, and then "leaving it alone."
Johnson says his 100% organic approach has produced noticeable results in just one year, and that no other resort comes close in "going green." For someone who always wanted to be a farmer, every day on the job is a labor of love - and it's blatantly visible. Johnson is so passionate about his way of gardening because environmental sustainability is a way of life for him. He eats organic and is concerned about the environment, now and in the future, for his kids. He feels he's gardening the way his grandfather would have: without the commercial herbicides, pesticides and fertilizers that have been used since the 1950s and that have created a plant culture dependent on them.
Johnson's first task after arriving on the job in August of 2007 was to repair the soil that had been so badly traumatized over the years. He's done that by adding organic composted mulch that he buys locally from Singh Farms. He mulches three times a year and it's tricky, he says, because for a short time, it's not especially pleasant looking or smelling. But guests have been fascinated - and impressed - with the process, and the results have been so spectacular that no one complains. The microorganisms necessary for plant life are scarce in desert soil, but his biologically active mulch adds them naturally.
Because the mulch holds moisture in the ground and cools the plant roots, he has been able to remove all the gravel in the flowerbeds creating a more natural look. He started his own compost area at the back of the resort but it takes five years to get it just 1" deep. The good news: he says he's not going anywhere.
So, if he doesn't use any commercial fertilizers, herbicides or pesticides, what does he use? Everything organic and sustainable because Mother Nature already gives us everything we need to garden abundantly. Johnson's magic formula, which he calls "compost in a sock," is compost "tea" brewed in dechlorinated water with other added nutrients like molasses and fish protein. Just one day after it's added to the soil on the lawns and flowerbeds, it produces millions of the microorganisms necessary for healthy plant life.
His next secret is a process called "fertigation." He makes a mild organic fertilizer and applies it through the resort's irrigation system so that it's always in the soil. Much like an addiction, commercial fertilizers force above ground growth and blooms while actually creating poor root systems that eventually rot and, in turn, kill the plant. His plants, on the other hand, never have to be removed and replenished.
By adding more atypical plants, he has been able to use less water and does not have to pull out and replace seasonal varieties. This past winter he added poppies, calendula and other perennials that need less water than the typical geraniums, petunias, etc. His new varieties also attract a profusion of bees and hummingbirds for propagation. Because these new plants are larger, they also protect the soil which means less water and fertilizer are needed. In the spring, when most gardeners were digging up and replacing winter flowers, Johnson simply cut his back. For summer, he then added snapdragons, zinnias, vincas, and two showy bloomers not often found in this part of the country, purple cornflowers and black-eyed Susans.
What's next? Johnson just finished building his own 10'x12' greenhouse so that the resort's plants, indoors and out, can be recycled and nurtured rather than disposed of. He also found an area where he envisions a culinary garden for herbs and vegetables and with a patio area for cooking demonstrations and events, complete with water, gas, fountains and shade trees.

Alvadora Spa at Royal Palms Resort is First U.S. Spa to Offer Luxurious Hungarian Omorovicza Facial
The Alvadora Spa at the Royal Palms Resort and Spa has introduced a new facial, custom-designed as an experience for couples but available to single spa goers as well.

The Omorovicza Facial was developed by Hungarian Stephen de Heinrich de Omorovicza and his American wife, Margaret. They launched their skincare line in 2006 with the intent of bringing the benefits of the ages old Hungarian thermal baths into the 21st Century. Their line combines the mineralized waters from an ancient source next to the Danube with natural ingredients like ruby crystals and Lake Hévíz mud. All of their products are paraben-and petrochemical-free. The couple worked closely with scientists to harness the curative powers of the thermal water which is naturally brimming with calcium, magnesium, zinc, copper and manganese – minerals which are said to boost collagen and elasticity, smooth and soften the skin, and improve eczema and extreme dryness.

According to Michelle Kinney, spa director at Alvadora, “We’re seeing amazing results for a variety of skin conditions from acne to extreme sensitivity. It’s especially good for mature skin but really everyone has been thrilled with their skin after the Omorovicza Facial. The products are the most effective, luxurious and exclusive we’ve seen in our spa. The power of the minerals is obvious and they are natural and chemical free.”

The first thing that makes these facials so relaxing is that they’re done on heated water beds, just as they’re done at the Omorovicza Spa in Budapest, giving the sensation of the Hungarian baths themselves. All facials at Alvadora are done European style where everything is done by hand rather than by machine, i.e. warm towels for steam rather than noisy steamers that interrupt an experience designed for relaxation.

The Omorovicza Facial is a “remineralizing” treatment and starts with either the Cleansing Milk or Thermal Cleansing Balm, followed by the Gentle Buffing Cleanser to exfoliate the face and décolleté. A Deep Cleansing Mask follows to draw out impurities and Reviving Eye Cream is added to contour the eye. A hand exfoliating massage is provided while the mask sets.

Next is a unique facial massage using Hungarian techniques that stimulate microcirculation and lymph drainage. Lastly, a Complexion Enhancer with SPF 15 and a spray of the Queen of Hungary Mist are applied. Each facial is customized to the client’s skin needs by the combination of products used.

Chef Hillson at T. Cook's Introduces His Privte Label Marmalade
Executive Chef and Iron Chef competitor, Lee Hillson of Royal Palms Resort and Spa, takes the term “house made” far beyond what most other top chefs are doing. It started with his private label Pesto recipe several years ago, and he has continually added new products, some for sale, some to be enjoyed only as a guest in T. Cook’s.

In 1929, the original Royal Palms was built on 65 acres in the middle of a citrus grove at the base of Camelback Mountain. Today, many of the original trees are peppered throughout the grounds and around T. Cook’s. In years past, citrus was one of four key drivers of the Phoenix economy.

Debuting in October, Chef Hillson’s Orange Marmalade will be a regular accoutrement on the restaurant’s breakfast tables and also available for purchase at $8 per jar. When the citrus is picked from the trees adorning the resort’s grounds in late January or early February, an estimated 1,000 to 2,000 numbered jars of signature marmalade will be available. For the balance of the year, the Royal Palms Marmalade will be made to the chef’s recipe using citrus from outside Arizona.

Large jars of Chef’s pickled vegetables such as carrots, onions, cauliflower, mushrooms, beets and kosher pickles colorfully line a cabinet in the restaurant. While these are not available for purchase, Chef Hillson uses them liberally in his menus in salads and as accompaniments. The list of pickled items, of course, varies seasonally.

Chef Hillson’s latest house-made venture is charcuterie. The rows and rows of cured meats in his charcuterie locker are expanding daily with luscious link chorizo, boar prosciutto, pork loin, lardo, pancetta, soppressata, coppa, mortadella, and lamb prosciutto to name a few. These too he features on his menus on everything from breakfast dishes to pizzas on the lunch menu and antipasto on the dinner menu.

Royal Palms Chef Kicks It Up A Notch with Farm-to-Table Commitment
Executive Chef and Iron Chef competitor, Lee Hillson of T. Cook’s restaurant and Royal Palms Resort and Spa, takes the term “farm-to-table” far beyond the status quo.

•It started with his private label Pesto and Mediterranean Salsa recipes several years ago. Both have been big sellers with T. Cook’s fans, and Chef regularly uses them in many of his dishes. •Before All-Natural, Free Range, Certified Organic and the like became required buzzwords on upscale menus, there was the French Label Rouge poultry program which has more stringent requirements than any program in America. In the 1960s, farmers in Southwestern France banded together to create a program focusing on high quality products. With this best poultry in the world now available in the United States, discerning chefs are finally elevating the status of chicken. And no one is doing it with more gusto than Chef Lee Hillson. Despite being nearly triple the price, he uses Poulet Rouge throughout the resort in banquets, for stocks and luscious restaurant entrees such as Pecan Wood Roasted Poulet Rouge Chicken with Herb Gnocchi, House Made Sausage, Broccolini and Local Fossil Creek Farms Goat Cheese. Chef’s Poulet Rouge presentations change seasonally.
•Chef Hillson only serves seafood that has been sustainably raised and harvested. Selections vary with the seasonal harvests, but include shrimp, Georges Bank scallops, Snug Harbor mussels, crab, clams, Maine lobster, organic Idaho-farmed trout, Irish salmon, halibut and more.
•Supporting local farmers and producers whenever possible is a commitment Chef Hillson fiercely adheres to. Just a few examples:
•Seasonal, organic produces comes from Singh Farms in Scottsdale and Duncan’s Farms in Goodyear, Arizona. Food waste is sent to Singh for composting.
•Goat cheese is purchased from Fossil Creek Creamery in Strawberry, Arizona.
•Oils used throughout the resort’s kitchens are bought from Queen Creek Olive Mill located in nearby Queen Creek, Arizona
•Chef Hillson worked with microbrewery, Sonoran Brewing Co. in Phoenix, to create his signature Royal Palms Olde Pale Ale which reminds him of his favorite British ales with its full, rich flavor and lots of hops. He is currently working on a second specialty beer and a signature root beer.

Director of Romance Customizes Over-the-Moon Occasions in Resort's Via Cappellos
Royal Palms Resort and Spa exudes romance at every turn with its regal Spanish Colonial architecture, luxurious estate-like interiors, beautifully sculpted gardens, multitude of indoor and outdoor mesquite fireplaces, and popular romance package and program offerings.

But it’s the customized “romance à la mode” experiences orchestrated by Director of Romance, Robert Vickrey that set the resort apart. Vickrey uses the many Via Cappellos, wonderfully intimate, private areas tucked away throughout the grounds, as his palette for romantic designs.

Named for Casa di Giulietta, or Juliet’s House, on Via Cappello in Verona, Italy, these “lovers’ corners” at Royal Palms provide magical settings for imaginative and one-of-a-kind evenings. “We customize every detail, from special flowers or rose petals, live music (everything from a string trio to a harp or Spanish guitar), and a menu of personal culinary favorites, all in our wonderful Via Capello settings such as the outdoor Bella Vista, the Bell Tower, Garden of Love, Alegria Garden, Amante Garden and Valencia Garden plus a host of private patios and tucked-away venues.”

Vickrey says that most people ask for his help because they want to do something special and need a little extra help. He approaches each request with the attitude of “what can we do that’s truly unique and make this a WOW experience?” He takes control of every detail so that his guests can completely relax and enjoy each moment.

He has enhanced special memories with violinists, flamenco guitarists, poem readers, rose petals (lots of rose petals), diamond-laced desserts, white doves and fireworks. He also handles the small, intimate (and often last-minute) details – rose petals or flowers for the table, exquisitely wrapped gifts, fine wine – with panache.

“We celebrate romance every day of the year at Royal Palms,” says Vickrey. “The tougher the times, the more important romance becomes in our everyday lives - it never goes out of style.”

Pearls of wisdom

Vickrey shares these thoughts about why his romantic events create such a dramatic impact:

•First and foremost is the element of surprise. It says volumes about how much effort, thought and care went into making a memorable evening.
•Second, because I’ve staged so many different experiences, I don’t miss any of the details that are going to make him or her feel adored.
•Third, to women, don’t be afraid to take the lead in surprising him – men love to feel adored too.
•Finally, romance should be fun. Relationships are serious, yes, but romance should be more whimsical, spontaneous -- and when you let us worry about the details, it is.
About Robert Vickrey

Vickrey joined Royal Palms as Maitre D’ in the award-wining and ultra-romantic T. Cook’s restaurant in August 2007. His special talents when interacting with guests and anticipating their requests and needs were immediately apparent and qualified him to step into the role of Director of Romance.

“Coming from Las Vegas, my career has been filled with opportunities of catering to the unique needs of high rollers which, in turn, I’ve been able to translate into ‘creative anticipation’ when serving the clientele at T. Cook’s and Royal Palms,” explains Vickrey. “And because Vegas is the marriage capital of the world, I’m no stranger to the romance side of guest experiences.”

Vickrey says that he gets his keen skills naturally. His father managed casinos in Las Vegas during the days of the Rat Pack, so he grew up learning how to treat people with a high level of respect and a desire to go beyond the obvious and create magic for them. To hone his skills further, he received a masters degree in communications from the University of Nevada, Las Vegas and currently teaches interpersonal communication and public speaking as an adjunct instructor at Chandler-Gilbert Community College.

In January 2011, Royal Palms will introduce Languages of Love, a resort-wide festival of the senses honoring Mediterranean countries that provide the inspiration for the resort’s architecture, design, gardens, ambiance, food and spa treatments. Sarah Escobedo explains, “We developed the Languages of Love experience so that our guests would be greeted with new ways to discover romance throughout the year, continually adding surprises and new elements. Our guests can fall in love over and over again.”

Romance will be fashioned in the style and language of love of these romantic Mediterranean countries:

•January through March: France - honoring Paris, who according to mythology was one of the most notorious lovers of his time, willing to risk his title, his fortune and his homeland for the love of Helen of Troy, the most beautiful woman in the world. Appropriately, the world’s most romantic city was named for him.
•April and May: Italy - honoring Venus, the Roman goddess of love and beauty, and Cupid, the Roman god of desire and love.
•June through September: Spain - honoring Aloja who, in Catalan mythology, were feminine beings who brought wealth and well-being to those around them.
•October through December: Greece - honoring Aphrodite, the Greek goddess of love, beauty and sexuality.
The Romance Team paired up with a local company, La Bella Terre, that provides “Botany for the Body” products and services in the fields of aromatherapy and seasonal cooking. Royal Palms and La Bella Terre share a deep commitment to organic, sustainable farming methods and together they are sourcing seasonal ingredients from herbs, flowers and trees for luscious herb-infused oils and products that will appear not only on Chef Hillson’s romantic menus but also in celebration cocktails and even in romantic spa rituals designed for couples. So what’s love got to do with it? From January through March, special French-inspired offerings will be created using lavender, verbena and rose.

Let the romance begin . . .

A night of romance often starts with a gorgeous cocktail. In T. Cook’s Lounge, Chief Mixologist Jason Horton speaks the Language of Love with his Rose Petal Infusion, featured in the T. Cook’s Lounge January through March. As beautiful as it is seductive, the Rose Petal Infusion is a combination of St. Germaine elderflower liqueur from France, Champagne, Grey Goose vodka from France, a muddled strawberry and garnishes of strawberry slices. That heartthrob Paris would be proud.

Stoking the fires of love in the kitchen . . .

Executive Chef Lee Hillson admits to being a true romantic. For years, he has lovingly served artistic, intriguing Mediterranean menus chocked full of aphrodisiac ingredients in T. Cook’s which is consistently sited as one of the area’s most romantic restaurants. Now he plans to spice things up a bit further.

January through March, his Language of Love menu will be built around lavender, verbena and rose infused olive oils. His “I Louvre You” (his words!) three-course menu is $65 per person with wine pairings an additional $25 per person.

Alvadora Spa Director, Michelle Kinney, has created new couples’ rituals using lavender, verbena and rose aromatherapies. According to Kinney, “We have always spoken the language of love at the spa. All of our treatments are inspired by the revitalizing benefits of the herbs, flowers, oils and minerals indigenous to the Mediterranean as well as the resort’s own citrus gardens.

While a variety of massages and the specially designed-for-couples Omorovicza Facial (it even sounds like love, pronounced “amour-o-vizza”) provide a host of sensuous options, it’s the couple’s rituals that take center stage. Providing a perfect recipe for bonding, each ritual combines the romantic, soothing effects of a leisurely fireside soak and three different gentle, mesmerizing showers with the sensuous experiences of body pampering and a light massage.

From January through March, Alvadora Spa will offer its Fluers de Roman (Flowers of Romance) Ritual, designed for romance and loving connection. The 90-minute ritual for two begins in the Acqua Dolce villa with a lavender, verbena and rose-infused body scrub on duo heated stone tables while water gently cascades from above. An outdoor eight-foot waterfall shower provides a final rinse and is followed by a romantic, candle-lit bath for two in the Acqua Giardino tub. A gentle lavender-verbena-rose aromatherapy massage and a glass of Rose Champagne complete the ritual. $210 per person.
