Maroma's new Wine Cellar offers guests a unique wine tasting experience with an extensive selection of wine labels from around the world. The cellar, located in El Sol restaurant, invites guests to discover the Latin influence on wines showcasing 316 wines from Argentina, Mexico, Spain and Chile as well as other well known wine regions in the US, France, Italy, Portugal, Australia, New Zealand, South Africa and Canada. All wines are served to enjoy and enhance the unique flavors of Chef Guillermo Gomez's Yucatan, Mayan and Creole flavored creations which are offered in the cellar at 7:30 every Thursday. Wine dinners in the cellar consist of six courses expertly paired by Maroma's wine expert, Rodrigo Ofner. The wine list at Maroma Resort and Spa was awarded with top honors by Wine Spectator magazine in 2008 as one of the finest wine lists in the world.

Maroma Resort and Spa has designed a new space, "Coffee Room", in partnership with the Regional Agricultural Union of Tacan Coffee Producers to play host to locally, highland grown organic and biodynamic coffee selections available complimentary to guests. The coffee is grown in the Sierra Madre de Chiapas, where the "coffee route" was created to support social development amongst coffee communities where 13 coffee farms participate. The high altitude where these plantations are situated make for the outstanding quality of the coffee due to the variety of trees along with skilled manpower. Chiapas produces organic coffee, which in addition to preserving the ecological balance of the soil; it is free of chemicals and pollutants, taking advantage of agricultural waste through recycling and the production of composting. Handmade products coming from the six most important coffee farms surrounding the Tacan volcano are exposed in the "Coffee Room" as Maroma Resort and Spa joins the social project with the solid aim of giving support to those communities who seek noble resources while waiting to harvest their yearly crops. In this way the indigenous communities of the region can preserve the ecological harmony and disseminate their culture.

Located in the main building, the Coffee Room plays host to not only a wide selection of coffees but also handmade products such as tamarind marmalade, chipotle marmalade, mango chutney among others as well as a variety of Mexican tequilas and wines. Hours of operation are 9am-10:30pm daily.

Maroma's Special Dinners allow guests to take full advantage of the breathtaking views; the perfect beginning to an unforgettable romantic evening. Each of the three offerings - Maroma Romantic Dinner, Maroma Beach Dinner or Mexican Dinner include a beach bed to admire the stars after a delectable meal.
