For a second time, Chef Francisco Flores was invited to participate in the Wine & Food Festival Cancún – Riviera Maya; this time the festival selected 50 top chefs from Mexico who are transforming the world of cuisine, ushering a new “Culinary Renaissance”. The top chefs will be participating in several acclaimed events including the renowned “Star Chefs of America” that will be held at the Fiesta Americana Grand Coral Beach Cancun Resort & Spa, presenting different culinary stations where guests would share with these famed chefs, while sampling their signature dishes, all accompanied by excellent wine tastings.

Chef Flores represents La Joya restaurant located at Fiesta Americana Grand Coral Beach Cancun Resort & Spa, offers authentic Mexican cuisine with exquisite dishes, and the Chef’s innovative creations with gourmet additions. With a typical “hacienda” decoration, mariachi band music and folkloric entertainment, the festive atmosphere completes the experience of guests visiting La Joya.

Biography

Growing up in Puerto Vallarta, Chef Francisco Flores Obieta became captivated with the culinary atmosphere and exceptional local products of his region. This passion would eventually take him to Europe, where he learned the precision and expertise of French cuisine.

A graduate of the prestigious Le Cordon Bleu culinary school in Paris, Obieta honed his high-level skills at renowned restaurants including Five Diamond “Signatures“ restaurant in Ottawa, Canada, the one Michelin Star “Au Comte de Gascogne” restaurant in Paris and as “stage” at the award-winning Pujol in Mexico City. Later on, he moved to Cancún as part of the culinary team that first won the AAA Five Diamond award at Le Basilic, an award the restaurant holds since 2008. Le Basilic is one of five restaurants in all Mexico currently with this distinction and Obieta is the only Mexican chef at the helm of this exclusive group of restaurants. He contributed to the creation of Le Basilic’s menu, which blends the freshness of local products together with the French culinary techniques, under the guidance of Maître Cuisine de France, Chef Henri Charvet.

Today, Chef Flores proudly holds the title of Executive Chef at Fiesta Americana Grand Coral Beach, where his imagination and experience lead him to create and explore the Mexican cuisine at all of the resort’s restaurants specially the Mexican restaurant La Joya.

One of the most expected events during the Wine & Food Festival Cancún-Riviera Maya is the “Star Chefs of America”, this event represents the great opportunity to meet the top 50 chefs of Mexico and special guests, while enjoying some of their signature dishes that will be offered along with wine tastings of recognized wineries to complete the experience.

Representing Le Basilic Restaurant from Fiesta Americana Grand Coral Beach Cancún Resort & Spa, Maître Cuisinier de France Henri Charvet was invited as a special guest to participate during these 2014 events.

Le Basilic Restaurant is highly recognized for the unique experience it offers, the blending of fine detailed elements to delight in deep sense the soul of their diners; enhanced by a French atmosphere, excellent service and art painting created at the moment by local artists, the soft performance of live jazz duet and the magnificent menus created by Chef Henri Charvet. All these combined elements have won for Le Basilic the distinctive 5 Diamond award since 2007 for 8 consecutive years, making it one of the only five restaurants in all Mexico with this recognition.







Maître Cuisinier Henri Charvet
Biography

Native of Macon, France, he showed great culinary abilities and love for the haute-cuisine at a very young age, he started his professional instruction in the Mâconnaise region at Chateau Saint Jean Le Priche-Saône et Loire, Chef Henri’s training ended with a tour of France and Europe.

In 1965 he founded his first restaurant “La Maison de Bois” in a 15th-century house in Macon. Following the success of his first restaurant, Chef Charvet continued opening, purchasing and operating 9 more restaurants in various regions of France successfully for many years. In 1985, he started a restaurant consultancy enterprise and in 2001 he was asked for counseling by the Paris’ famed hotel, The Trémoille.

In 2002, Fiesta Americana Grand Coral Beach Cancún Resort & Spa asked Charvet to create a new French-Mediterranean concept restaurant. Thanks to his wealthy experience and talent for innovation, Charvet complemented this unique restaurant concept - Le Basilic. Enriched with artistic live painting performance and jazz music in the background, this fine-dining restaurant offers diners gourmet cuisine and outstanding service, which gave the restaurant the prestigious AAA Five Diamond rating since 2007 – one of only five restaurants in all Mexico with such privilege.

Maitre Cuisinier Charvet perpetuates the excellence of French cuisine in his every endeavor and currently holds the titles of Chevalier du Mérite Agricole, Master Chef of France, President of Eurotoques France at the Association of European chefs to defend the quality products of agriculture, the administrator of pension and provident Circo Circo, advisor of technology education and Master consulting in French gastronomy.

About the AAA and the 5 Diamond Award

The AAA (formally known as American Automobile Association) started in 1902 as an independent federation of motor club. In 1937 the agents for the AAA started scoring restaurants and lodgings. In 1963 and they start assigning rates from good to excellent. In 1977 when the AAA celebrated his diamond anniversary they start giving the rates as “Diamonds”.

The 5 diamond award is the highest level to obtain through the AAA. For that, the restaurant has first to accomplish the basic requirements, to start being inspected by the agents. Once evaluated, a rate from one to five diamonds will be assigned according to the published politics for hotels and restaurants according to facilities, amenities and services.

There are currently only 55 restaurants in North America holding the 5 Diamond award.

Renovating menus at Le Basilic

Fiesta Americana Grand Coral Beach Resort & Spa was honored with the visit of the Maitre Cuisiner of France, Chef Henri Charvet, who presented the all-new gourmet menu for the resort’s AAA Five Diamond restaurant, Le Basilic. Chef Charvet refreshes the restaurant’s menu two to three times a year according to the season. Artfully designed, this season’s updated menu integrates new concepts from French-Mediterranean cuisine with Mexican local ingredients to create innovative fusion dishes that satisfy even the most discerning palates. New delectable menu items include artichoke hearts and foie gras with fig mayonnaise, pepper coulis, funnel puree and onions with capers.

This exclusive restaurant is located near the main lobby of the hotel and is one only four restaurants in all of Mexico awarded with AAA’s prestigious Five Diamond Award thanks to the culinary collaboration of Chef Charvet, the resort’s Executive Chef Francisco Flores and Le Basilic’s Chef of Cuisine Eduardo Torres.

Chef Henri Charvet presents Le Basilic with appetizing new menus that guests can enjoy in the restaurant’s unique dining ambiance that combines the artful strokes of Mexican painter Leon Alva and the vibrant music of live Jazz.
