This December, Steve Wynn and restaurant impresario Michael Morton open La Cave Wine and Food Hideaway, nestled inside Wynn Las Vegas. Inspired by the Latin phrase "in vino veritas" (in wine there is truth), La Cave offers an escape where guests can enjoy a modern American small plates-menu from Executive Chef William DeMarco. Global wines were selected by Danielle Price, award-winning executive wine director of Wynn Resorts, and Rober Wright, La Cave wine director.
The wines at La Cave will surprise and please connoisseurs and novices alike. Guests can sample a 2000 Harlan Estate Bordeaux-blend from Napa Valley, California, a boldly flavored domestic wine, along with other interesting selections such as a 2009 Mollydooker Shiraz Blue Eyed Boy from South Australia.
"La Cave's wine list offers a variety of wines that encourage guests to approach wine from a fresh perspective and explore new varietals," Wright says.
Open for lunch, dinner and late-night indulgences, La Cave's menu features an array of international influences to complement Wright's wine pairings. The menu is divided into categories based on the dishes' origins: From the Sea, Farm, Oven, Garden, Grill, Butcher, and cheeses From The Cow, Sheep or Goat. Flavorful flatbreads such as ham, egg and cheese with quail eggs and Neuskes bacon are ideal for sharing, while vegetable dishes including salt-roasted beets with whipped goat cheese and pistachio entice meat and veggie lovers alike. Creative seafood dishes including hamachi with pickled chilies and candied lemon zest join meat and poultry options such as horseradish and parmesan-crusted rack of lamb to cater to a range of tastes. Dishes from the grill such as Angus mini burgers with mushroom and chipotle mayo further round out the menu and satisfy cravings. In addition, guests can select from a variety of meats and cheeses to create their own charcuterie board.
Designed with 555 International, La Cave is comprised of three distinct spaces-"the cave," main dining room and garden lounge. Guests are greeted by a glass entryway surrounded by rich wood panels. The cave features cobblewood oak flooring, low vaulted ceilings and a large sign made of red LED lights that reads "In Vino Veritas." An arched steel-metal gate features Latin phrases celebrating food, wine and the arts, evoking the feeling of an exclusive wine cellar in Tuscany while providing a glimpse into the main dining room.
Spacious and low-lit, the dining room boasts a center bar outfitted in a herringbone pattern and bookmarked by two wine rooms. A ten person "share table" features a walnut table perched atop two large wine barrels that allows for intimate wine tastings and special events. The garden lounge recalls an oversized living room with mix-and-match custom-made chairs and tables, at which guests can unwind with a glass of wine and small plates from DeMarco.

The folks who making a living selling Las Vegas can start spreading the news: Las Vegas is now home to 15 AAA Five Diamond resorts and restaurants, more than any other city in the country.

"From what I understand, Las Vegas not only has more AAA Five Diamond establishments than any other city in the country, but also in the world," said AAA Nevada spokesman Michael Geeser.

"This means a couple things for the city. For starters, it elevates the city's reputation for quality and service, things that travelers really desire. More importantly, it affirms that the city is able to deliver on its promises."

Vegas' Five Diamond hotels include CityCenter's Aria and Mandarin Oriental along with repeat winners Bellagio, Encore, Four Seasons, Skylofts at MGM Grand, Palazzo, Wynn Las Vegas, Venetian and the now-shuttered Ritz-Carlton at Lake Las Vegas (Dolce Hotels & Resorts plans to reopen and rebrand the Ritz-Carlton this spring).

This award marks the Four Seasons' 12th consecutive year as a AAA Five Diamond hotel and Bellagio's 10th year receiving the honor.

All the Five Diamond award-winning restaurants in Las Vegas are repeat recipients, including Alex at Wynn Las Vegas, Guy Savoy at Caesars Palace , Joel Robuchon at MGM Grand and Picasso and Le Cirque at Bellagio.

Nationally, seven restaurants were removed from AAA's Five Diamond list; none were added. The recently released AAA Five Diamond list covered Northern California, Utah and Nevada. National lists will be unveiled in January.

The Encore Beach Club, Surrender Nightclub and a newly revamped Switch restaurant will blend the daytime beach party, upscale restaurant and nightclub into an experience that will allow guests a seamless transition from day to night, hotel officials say.

The 60,000-square-foot Encore Beach Club will boast 40-foot palm trees surrounding three tiered pools. LAS VEGAS, October 2008"December 2008 marks the debut of Encore, the new signature resort in the Wynn collection. Adjacent to Wynn Las Vegas, Encore upholds its sister hotels mantra: the chefs have moved to Las Vegas and will be cooking in their new kitchens each night. All respected and nationally acclaimed talents in their own right, each Encore chef joins Wynns already formidable collection of award-winning restaurants.

Joining the team are Theo Schoenegger, of four-star Patina in Los Angeles; Jet Tila, a nationally recognized chef and expert in Asian cuisine; Marc Poidevin, formerly executive chef of Le Cirque at the Bellagio and most recently Wynns executive chef of catering and special events; Mark LoRusso, previously the executive chef of Tableau at the Tower Suites at Wynn Las Vegas; and Kim Canteenwalla, who worked with Mr. Wynn at Beau Rivage in Biloxi, Mississippi and has consulted on such projects at Ritz-Carlton Palm Beach and One&Only Palmilla.

Making the move from Los Angeles, Theo Schoenegger will open his first Las Vegas restaurant, Theos. Schoenegger is eager to offer guests his signature approach to Italian cuisine by deconstructing traditional dishes and recreating them with a refined, modern approach that emphasizes seasonality. The fine-dining establishment features a chefs table that seats up to 10 people and serves a market-driven menu. Schoeneggers relationships with California farmers allow him to bring the areas fresh, seasonal and greenmarket ingredients to his restaurant at Encore. A cozy outdoor patio allows guests to dine al fresco, creating the feel of an intimate dinner party in a Tuscan garden.

Jet Tila is well known for his widespread knowledge of Thai, Chinese, Japanese, Vietnamese, Korean and Indian cuisines. At Encore, he opens Wazuzu, a modern Asian bistro, named after a Chinese word that means Nine Dragons. The name references a well-known painting of nine young dragons from the end of the 16th century. In homage to the original work, a large crystal dragon comprised of 90,000 Swarovski crystals and 2,400 flickering lights graces Wazuzus wall. Open for lunch and dinner, the casual yet vibrant restaurant features the various cuisines of Southeast Asia, also offering sushi, sashimi and creative rolls.

Marc Poidevin, formerly Wynns executive chef of catering and special events, is at the helm of Switch, a French-inspired steakhouse and seafood restaurant with an emphasis on the finest seasonal ingredients. Switch undergoes a physical transformation each night as seats, chandeliers and walls move to create a dramatic and theatrical dining experience.

Mark LoRusso received critical acclaim for Tableau, his refined modern American restaurant located by the Tower Suites at Wynn Las Vegas. As Tableau is transformed into Larry Forgiones An American Place, LoRusso introduces Botero Steak at Encore. Named after Colombian artist Fernando Botero, LoRussos signature restaurant features a modern steakhouse menu in a sexy and sophisticated setting beside the resorts nightclub, XS, and overlooks Encores sparking pool.

As executive chef of Society Caf Encore, Kim Canteenwalla offers guests a classic American menu of old school favorites that have been reinterpreted with a modern sensibility.
